WHAT: Copain Wines, the acclaimed Healdsburg winery best known for its refined Pinot Noir and elegant Syrah, is pleased to announce its summer ‘Supper Club’ with Hana Japanese Restaurant Chef/Owner Ken Tominaga and Sake Sommelier Stuart Morris. This intimate, one-of-a-kind dinner will showcase the best local ingredients of the season in a seven-course, Japanese-inspired menu prepared by the Tokyo native and revered Sonoma chef, paired with Copain’s exquisite portfolio of food-friendly wines and an impressive bevy of rare sakes. Each course will feature a wine and sake pairing, carefully selected by Copain Partner/Winemaker Wells Guthrie and Morris. Together, they will guide guests through this enthralling and educational epicurean journey as they explore the sublime synergy of food and wine pairings. Sample menu items include Sashimi of live east coast scallop with strawberry vinaigrette and micro shiso; Egg Paradise with onsen tamago, Mendocino uni, house-cured ikura, sturgeon caviar and chilled sweet wasabi broth; and Unagi and seared ankimo with poached daikon and kabyaki balsamic reduction. Held at the picturesque winery overlooking the Russian River Valley, this dinner is the second installment of Copain’s new 2012 ‘Supper Club’ series, a collection of highly personal, wine-inspired culinary experiences during which the winery opens its kitchen to top chefs from across the country. Later this year, the winery will host James Beard Award winners and Food & Wine magazine Best New Chef honorees Corey Lee of Benu, Lachlan Mackinnon-Patterson of Frasca, and David Chang of Momofuku. WHO: Tokyo native and revered chef Ken Tominaga opened Hana Japanese Restaurant in Santa Rosa in 1990, which has since developed a devoted cult following among fellow chefs and local restaurant industry professionals. Growing up in Japan, Tominaga’s parents fully immersed him in the vibrant dining scene, and throughout high school, he worked his way up through a several restaurant positions. After graduation, he moved to Santa Rosa, Calif. to join his family’s optics business, eventually returning to Tokyo to attend the Akasaka Cooking School. Most recently, Tominaga and culinary partner Michael Mina teamed to open PABU in Baltimore, a modern twist on Japanese izakayas. Stuart Morris developed a curiosity for sake while working at a sushi bar in the U.S. Virgin Islands in 2000. Initially self-taught, he moved to the Napa Valley in 2002 and started cooking with Chef Ken Frank at La Toque, who introduced him to famed sushi chef Ken Tominaga. After years of eating sushi together and discussing sake pairings at Tominaga’s Hana restaurant, the two collaborated to open Go Fish in St. Helena in 2006. In 2009, Morris became among the cadre of Americans to travel to Japan and pass the intense Kikisake-Shi, earning him a title equivalent to a Master Sommelier for sake.
