Big Ideas and Rich Conversations with Women
The women's forum "Awakening Your Legacy" continues its odyssey with Hai Vo and Youth and the Real Food Challenge. Each month's event includes a freshly prepared by the Ramekins Culinary School chef, an interview with a thought leader and conversations.

July 28 with Hai Vo, 2009 social ecology graduate, UC Irvine, and winner of the global Youth Award as an Environment Hero of the Year.

As a low income student in the public school system, Hai Vo got free lunches at a high price.  He tipped the scale at 250 pounds when he entered college and began studying food's journey from field to fork.  In order to educate and connect with other students, Hai helped organize events to bring students together to "simply eat" and to discuss their understanding of food.

Hai became a student leader in the Real Food Challenge to shift the four billion dollars spent annually on food at universities to real food.  He brought pencils and notebooks into the kitchens at UC Irvine to survey the food served to students and discover how much sustainable food was used.  He found the UC Irvine procured only 10% real sustainable food and then he worked with the entire University of California to develop a system-wide institutional commitment to 20% real food by 2020. 

Hai is now immersing himself in urban farming, looking for innovative ways to grow food within a city and on school campuses.  A crack in the cement and a small clay ball with tomato seeds produced a half dozen tomato plants and funding for a 2-acre garden on a school campus.  Hai demonstrates that youth can have big ideas and make a difference.
